Cold Brewed Coffee

EQUIPMENT
Large pitcher
Glass carafe or large Mason jar
2 coffee filters
INGREDIENTS
2 cups coarse, unflavored coffee grounds, i.e., French Roast
6 cups purified or filtered water
PREPARATION AND COOKING TIME
Prep time: 5 minutes
Cooking time: 8 hours or more to soak coffee grounds
METHOD
Add 2 cups of water to 2 cups of ground coffee in a large pitcher.
Mix thoroughly to wet all coffee grounds.
Let the grounds soak for 8 hours or more in the fridge.
After soaking, filter the coffee grounds by placing a coffee filter over a large carafe or Mason jar and emptying soaked coffee grounds into the filter. Set aside for about 5 minutes to allow the coffee water to filter through (approximately 1 cup).
Boil an additional 4 cups of water and pour the hot water very slowly over the coffee grounds. Use a spoon to rearrange the grounds and allow the water to filter through more easily.
Discard coffee grounds and rinse filter and pitcher.
Place a cleaned filter over the pitcher and pour coffee back into the pitcher.
Rinse filter again and remove final sludge by using the cleaned filter to pour coffee back into the carafe/large Mason jar.
SOME TIPS AND COMMENTS
1. One-half cup cold brewed coffee equals approximately 1 espresso shot in concentration.
2. This style of coffee preparation results in a low acid coffee that is smooth tasting and easy to digest. It gets rid of the acids and makes it pure.
3.Pour coffee mixture, once pressed or filtered, over ice cubes to add directly to warm or cold milk. Add sugar.
YIELD: 4-5 cups
SERVING SUGGESTION
It is highly recommended that you add milk/cream and sugar to your coffee. If you prefer black coffee, consume it with a balanced meal.
